At Romero Osteria, we invite you to immerse yourself in this ancestral process that connects with the essence of Pachamama, offering an authentic and deeply meaningful meal.

The process:

The Pachamanca is cooked in an underground oven prepared with volcanic stones heated red-hot. Layers of meats, tubers and vegetables, seasoned with local herbs and spices, are placed over these stones. The food is covered with leaves and earth, creating a natural oven that concentrates heat and moisture for slow, even cooking. Then the feast is unearthed, ready to be enjoyed in a family, festive atmosphere.

Ingredients and sides:

• Meats: lamb, pork, chicken.
• Tubers: 3 to 5 varieties of potato depending on the season, sweet potato, oca.
• Vegetables and others: corn, fava beans, plantain, humitas.
• Salads: garden salad, criolla salad, house salad.
• Sauces: uchucuta, huancaína, chimichurri, pico de gallo, house chili sauce.

Includes:

• Participation in preparing and cooking the Pachamanca.
• Tasting of the Pachamanca served with traditional salads and sauces such as uchucuta and huancaína.
• Hot drinks break, water and one refreshing drink.

• Requires booking at least 48 hours in advance.
• We adapt the experience for private groups, with customized options.
• Additional services: cooking or cocktail classes can be added.
• Other proteins: alternative option with guinea pig or trout.
• Vegetarian or vegan option, replacing the meats with mushrooms, eggplants and other plant-based meat options.
